Bay Leaves

  • Bay leaves are used a lot in culinary dishes such as stews and bouquet garni.
  • Also known as the sweet bay or sweet laurel.
  • Official name Laurus nobilis.
  • Technically from Asia, but has become a symbol of the Mediterranean, where it thrives.
  • Historically, crowns of bay leaves were given to victors of battles and sports (Ancient Greece and Rome) and to poets laureate (hence, the name).
  • Leaves can run up to 4-5 inches long, although many will be torn into smaller pieces.
