Bay Leaves
Bay leaves are used a lot in culinary dishes such as stews and bouquet
garni.
Also known as the sweet bay or sweet laurel.
Official name Laurus nobilis.
Technically from Asia, but has become a symbol of the Mediterranean,
where it thrives.
Historically, crowns of bay leaves were given to victors of battles
and sports (Ancient Greece and Rome) and to poets laureate (hence, the
name).
Leaves can run up to 4-5 inches long, although many will be torn into
smaller pieces.
